Add a bit of fun at dinnertime with these delicious vegetable waffles. Made with grated veggies, cheese and without flour or gluten, they are healthy and yummy at the same time! Don’t have a waffle iron? Not a problem, you can use the same mixture to make them into veggie pancakes instead! Vegetable waffles carrot and courgette - what you need 1

Ingredients:

  • 1 large courgette,  peeled and grated (about 180g)
  • 1 medium carrot, peeled and grated (about 90g)
  • ½ onion, peeled and grated
  • 1 garlic clove – crushed
  • 1 egg
  • 15 grams arrowroot powder
  • 30g grated cheddar cheese
  • Oil spray (we use fry-lite avocado oil but any oil spray helps)

Instructions

  1. Grate the carrot, courgette and onion. Crush the garlic clove. Dab the vegetables with a kitchen towel to remove any excess water.
  2. Mix these together with the egg, arrowroot powder and cheese. Stir until you get a thick consistency.
  3. Open the waffle iron and set to medium heat. Spray the inside with an oil spray.
  4. Spoon the mixture into the waffle iron until level with the mould (try not to overfill it). Use a fork to ease the mixture into the edges of the mould.
  5. Close the waffle iron for a few minutes until the waffle is golden brown.
  6. Enjoy! Lift your waffle out and serve with hummus, guacamole or another dip of your choice. It could also make a tasty side to a meat dish.

Grate the carrot, courgette and onion.

Crush the garlic clove.

If there is excess water after grating drain the grated vegetables or dab them down with kitchen towel.

Stir until you get a thick consistency
