Add a bit of fun at dinnertime with these delicious vegetable waffles. Made with grated veggies, cheese and without flour or gluten, they are healthy and yummy at the same time!

Ingredients
1courgettelarge (about 180 grams)
1carrotmedium (about 90 grams)
1 garlic clovecrushed
1egg
15gramsarrowroot powder
30gramscheddar cheesegrated
oil spray
Instructions
Grate the carrot, courgette and onion. Crush the garlic clove. Dab the vegetables with a kitchen towel to remove any excess water.
Mix these together with the egg, arrowroot powder and cheese. Stir until you get a thick consistency.
Open the waffle iron and set to medium heat. Spray the inside with an oil spray.
Spoon the mixture into the waffle iron until level with the mould (try not to overfill it). Use a fork to ease the mixture into the edges of the mould.
Close the waffle iron for a few minutes until the waffle is golden brown.
