Try this new take on savoury waffles. With fresh aubergine, chopped parsley and ground feta cheese, they’re a creamy and tasty dish for kids. Enjoy them as a side with some grilled meat or fish, or as a main meal with some cherry tomatoes, rocket leaf salad and a drizzle of olive oil. If you are into veggie waffles at the moment, we’ve also made these great Carrot and courgette waffles, packed with vegetables that kids will enjoy. Both are gluten free and completely delicious!

Ingredients

  • 1/2 aubergine (approx. 175g) peeled and cubed
  • 1 tablespoon parsley leaves
  • 15 grams arrowroot powder
  • 30 grams feta cheese
  • 1 egg
  • Oil spray (we used fry-lite avocado oil but any oil spray will do)

You will need a waffle machine for this recipe. If you don’t have one you can still make super yummy pancakes using the same recipe, just heat some oil in a frying pan and spoon the mixture in.

Instructions

  1. Peel and cube the aubergine. Place the pieces in a saucepan, fill with water and boil for 10-15 minutes.
  2. Drain the aubergine pieces and mash them about a bit with a fork to get the excess water out of them. Get as much as you can out of the aubergine pieces and strain this water off.
  3. Then add the aubergine pieces to a blender with the rest of the ingredients: egg, feta cheese, chopped parsley and arrowroot powder. Blend until smooth.
  4. Prepare the waffle iron. Turn it on a medium heat setting and spray the inside with the oil spray.
  5. Spoon mixture into the waffle iron. Try not to pack too much in, just fill it until it is level with the mould. Using a spoon or fork, gently ease the mixture into the edges of the waffle mould.
  6. Close the waffle iron and wait for a few minutes until it is golden brown.
  7. Lift out and enjoy your savoury waffle! You can serve it with some salad and cherry tomatoes as a main meal, or as a tasty side dish.

Peel and slice the aubergine. Place it in a pot of boiling water and simmer for 10-15 minutes.

When it’s ready drain the aubergine pieces and mash them about a bit with a fork to get the excess water out of them. Strain this water off.

Spoon mixture into the waffle iron. Try not to pack too much in, just fill it until it is level with the mould. Use a spoon or fork to ease the mixture right into those edges.
