In these recent times, rainbows have become a beacon of hope for children and families across the globe. So if there was ever a time to make a rainbow pizza, this would be it.
 
Packed with nutritious, fresh, colourful ingredients, kids can appreciate the variety and beauty of the vegetables all around us.
 
We’ve suggested some vegetables here for each rainbow colour, but you can let kids choose their own favourites to make their pizza personalised.
 
It can help them to get involved in their meals and make the most colourful family dinner ever.

How to Make Homemade Pizza Base

If you’re thinking of making a pizza base from scratch for the first time, it’s a lot simpler than you might expect.

It generally requires flour, yeast, warm water and here we have also added some vegetable oil and maple syrup for fluffiness and flavour. The ingredients simply need to be mixed, kneaded together for a few minutes and then left to rise.

What is Italian 00 flour?

For pizza bases, we prefer to use a flour type which is called ‘Italian 00 flour’ or ‘farina 00’. This flour is very similar to plain flour, so you can use plain flour instead if you cannot find it.

However as it is finer, it creates a softer, silkier dough. You can taste the difference, so we would recommend keeping some in stock for pizza bases if you are able to.

Rainbow Pizza

Ingredients

Pizza base:

  • 4 cups Italian 00 flour (or plain flour), 500 grams
  • ½ teaspoon salt
  • 1 x 7 gram yeast sachet
  • 300 ml warm water
  • 2 tablespoons maple syrup
  • 2 tablespoons vegetable oil

Pizza Toppings:

  • 1 cup passata (240 ml)
  • 1 lb mozzarella cheese, grated (450 grams)
  • 24 cherry tomatoes
  • 1 yellow pepper
  • 1 green pepper
  • ½ punnet mushrooms (125 grams)

Instructions

Pizza base:

  1. Pour the flour and salt into a large mixing bowl. Make a hole in the top of the mound.
  2. Mix the yeast in the warm water until dissolved and pour it gently into the middle of the flour.
  3. Add in the maple syrup and vegetable oil.
  4. Gradually mix everything together until you have a smooth dough and then knead it for a few minutes.
  5. When it’s ready, roll it into a ball in the bowl. Cover the bowl with a warm damp cloth and leave it to rise for anywhere between 20 minutes to an hour.

Rainbow Pizza:

  1. When you’re ready to cook, preheat the oven to 180°C or 350°F fan setting.
  2. Flour a clean surface and roll out your pizza dough into a large circle.
  3. Using a sharp knife, cut out an arch from the circle and place it on a greased baking tray.
  4. Spoon on a thick layer of tomato passata on top of the base and cover with the grated mozzarella cheese.
  5. Carefully add on your vegetables in colour layers, starting from the innermost ‘band’ and working your way out. Leave enough space to have some nice thick layers of colour.
  6. When you’ve covered the pizza in your chosen vegetable colours, cook on the middle shelf of the oven for 20-30 minutes or until golden. Enjoy while warm!

Make your pizza dough (if making from scratch)

Pour your 00 flour (or plain flour) into a large mixing bowl with the salt. Make a well in the middle of it.

In a cup mix your yeast together with the warm water. Stir it until it’s fully dissolved and then pour it into the middle of the flour.

Mix everything together with a fork. Then add in the maple syrup and vegetable oil and knead the dough for a few minutes.

Cover with a damp cloth and leave to rise

Place your kneaded dough in the bowl and cover it with a warm damp cloth.

Set it aside so that it can rise, for anywhere between 20 minutes to 1 hour.

Roll out the dough into a large circle

When you’re ready to start making your pizza, preheat your oven to 180°C or 350°F.

Flour a clean work surface and roll out the dough into a very large circle.

Cut out your rainbow shape

Cut out a rainbow shape from your circle and transfer it onto some greaseproof baking paper or onto a greased oven tray.

Spoon your passata over the top and sprinkle on your grated mozzarella.

Add your rainbow vegetables to the pizza

Chop your vegetables so that they’re ready to add to the pizza base.

Halve the cherry tomatoes. Cut the yellow and green peppers into evenly sized chunks and slice the mushrooms thinly.

Line up each layer of vegetables so that they make bands of colour along the rainbow.

Kids can have a lot of fun building their rainbow using these vegetables or ones that they have chosen themselves.

It’s also a great way to get them involved in making their own food.

Cook in the preheated oven for 20-30 minutes until golden and enjoy a colourful family meal.
