Ingredients
- 2 parsnips
- 1 tablespoon fresh thyme leaves
- 4 tablespoons olive oil
- Salt and pepper
Instructions
- Preheat the oven to 180 degrees Celsius.
- Wash and peel the parsnips, cut the top and end off.
- Take a vegetable peeler and carefully peel thin slivers of parsnip starting from the thick end. Place in a bowl.
- Add the olive oil, thyme leaves, salt and freshly milled pepper. Mix well until each parsnip sliver is covered in oil.
- Place on a large baking tray. Spread them out so that each sliver has its own space.
- Cook for 25 minutes or until golden. Keep an eye on them as they brown quickly.
- Remove from the oven and let them cool a little.

Parsnip chips – our step by step guide:

Taking a peeler, cut thin round slices of the parsnip.
Start from the thick end and work your way back carefully.
Place all the slices in a bowl.
Add olive oil, thyme leaves, salt and pepper.
Lay them out on a baking tray. Spread them out so that each slice has its own space.
