This recipe for green pea fritters uses two fresh vegetables as well as fresh herb leaves so it is a healthy meal for toddlers and older babies. The green peas add a creamy texture, the grated courgette is light and airy and the mint and coriander add an aromatic flavor. The feta cheese also adds some creaminess and gives these pea patties some extra flavour.

How Do You Make Green Pea Fritters?

To make the green pea fritters you simply blend and mix the ingredients together. The green peas need to be boiled before they are lightly blended with the other vegetables and feta cheese. The courgette is grated and set aside for a few minutes so that it can be patted down with a paper towel to remove extra water. After that it is also just mixed in with the other ingredients.

When everything has been stirred together you then form the mixture into round patties and cook in a little olive oil until golden.

Ingredients

  • ½ large courgette (zucchini) grated – about 100 grams
  • 1¼ cups frozen green peas (200 grams)
  • 2 spring onions
  • Fresh mint leaves, handful (about 6 grams)
  • Fresh coriander leaves, handful (about 6 grams)
  • 125 grams feta cheese
  • 1 egg, lightly beaten
  • 1 tablespoon lemon juice
  • 50 grams flour (just under ½ cup)
  • 2 tablespoons olive oil

Instructions

  1. Grate half a large courgette and set it aside in a bowl while you prepare the rest of the ingredients.
  2. Boil the green peas for a few minutes until they are cooked through.
  3. Place them in a mixer with the spring onions, fresh mint and coriander leaves, and feta cheese.
  4. Blend until you get a rough crumbly mixture and empty it into a medium sized mixing bowl. Add the beaten egg and lemon juice and stir together.
  5. Return to your courgette. Take 2 sheets of kitchen paper and press it firmly on top of the grated courgette. This is to squeeze out as much water as you can. Do this twice if you need to and then add the courgette to the other ingredients.
  6. Spoon in the flour and stir everything together. Your mixture will be sticky but it should hold together when you spoon it out.
  7. Heat 1 tablespoon olive oil in a frying pan on a medium heat.
  8. Scoop up some of the mixture with a spoon – a ball about as big as a ping pong ball works well – and place it in the pan of heated oil.
  9. Using two spoons, press down onto the top and sides of the ball in the pan, so that you form it into a round patty. Repeat again for the rest of the mixture. If you need to add another tablespoon of oil for the second batch.
  10. Cook each pea fritter for a few minutes on each side until golden and cooked through. Serve with a spoonful of yogurt for a great toddler meal.

Take the grated courgette that you prepared earlier and press down on it firmly with kitchen paper. This is to remove the water from it before adding it to the other ingredients.

Spoon in the flour and stir everything well until all the ingredients are evenly distributed.

When you’re ready to start cooking, heat a tablespoon of olive oil in the frying pan. Spoon out a ball of the mixture and place it in the pan.

Repeat for the rest of the mixture. Cook each pea fritter for a few minutes on each side until golden brown.
