How to Make Blueberry Blondies?
Blueberry blondies are really easy to bake. If you’re making these as a baking project, you can even let the kids do the mixing for you.
First you combine the wet ingredients, such as the sugar, butter, maple syrup and yogurt together. Add in the flour and other dry ingredients and mix. Gently stir in the blueberries and it’s ready to go.
Pour into an oven dish and bake for 20-30 minutes or until golden on top.

Wet Ingredients:
- ¾ cup golden granulated sugar (150 grams)
- ½ cup unsalted butter, softened (110 grams)
- 1 tablespoon natural yogurt
- ½ cup maple syrup (120 mls)
- 1 egg
- 1 teaspoon pure vanilla extract
Dry Ingredients:
- 1½ cups plain flour (180 grams)
- ¼ teaspoon baking powder
- ¼ teaspoon salt (remove if using salted butter)
- 1 punnet fresh blueberries (about 125 grams)
- 6 tablespoons white chocolate chunks
Instructions
- Preheat the oven to 180°C/350°F fan setting.
- Mix the softened butter with the granulated sugar.
- Add in the maple syrup, lightly beaten egg, natural yogurt and vanilla extract.
- Stir in the dry ingredients, the flour, baking powder and salt.
- Wash a punnet of blueberries (about 125 grams) and pat them down until completely dry. Sprinkle the blueberries with a little plain flour until coated and then stir into the batter gently, together with the white chocolate chips.
- Pour the batter into a greased oven dish about 10 x 10 inch (or 25 x 25cm). Sprinkle with some extra chocolate chips.
- Bake in the middle shelf of the oven for about 20 minutes or until the edges are slightly golden but the middle is still soft.
- Remove from the oven and let it cool completely before cutting into squares.
- If you like you can mix some icing sugar with milk or water and drizzle this over the top in diagonal lines to finish.

Step by Step Guide
Mix the Wet Ingredients
Mix the butter and sugar together with a fork or whisk.
Add in the maple syrup, yogurt, egg and vanilla extract. Whisk until combined.
Stir in the Dry Ingredients, Blueberries and White Chocolate Chips
Stir in the flour, baking powder and salt. Stir until just combined.
Sprinkle the fresh blueberries with a little plain flour until lightly coated in it.
Gently stir them in together with the white chocolate chips.
Pour into a Shallow Oven Dish
Pour the mixture into a large shallow oven dish that’s either well-greased or lined with baking paper.
You want it to be about an inch thick or a little less.
Bake and Cut into Slices
Bake for 20 minutes or until slightly golden on top.
Leave to cool completely. If you would like you can drizzle with icing which you can make by mixing icing sugar with a little water or milk.
