Ingredients
- 1 small onion, grated or finely chopped
- 1 stick celery, finely chopped
- 1 carrot, peeled and grated
- 1 Teaspoon parsley leaves, chopped
- 1 Teaspoon thyme leaves, chopped
- 1 Tablespoon raisins, finely chopped
- 30mls no salt chicken stock – see our own stock recipe
- 2 Tablespoons of oat flour (or finely ground oats)
- 1 Tablespoon olive oil
Instructions
- Heat the oven to 180 degrees Celsius.
- Grease a baking dish with olive oil or oil spray.
- Chop the celery. Peel and grate the onion and carrot.
- Heat 1 Tablespoon olive oil in a frying pan and saute the onion, carrot and celery for a few minutes until soft and golden.
- When they are cooked and slightly browned, remove and place in a bowl.
- Mix in the chopped parsley and thyme, the chopped raisins and the chicken stock.
- Add 2 tablespoons of oat flour (or finely ground oats) and mix together.
- Start forming the mixture into patties. Spoon off the mixture into a baking dish and pat it down to form it into circles. Or do what we did and place a biscuit cutter in the baking dish. Fill it with stuffing, and compact it with a spoon. Then remove the biscuit cutter to leave a nice round stuffing patty.
- Continue until all the mixture is in the baking tray.
- Cook for 15-20 minutes or until golden.
- Remove, cool and let baby enjoy!

You can spoon off the mixture onto a baking dish and pack it down with a spoon, or you can do what we have done and place a biscuit cutter in the baking dish.
Fill the biscuit butter with stuffing, and compact it with a spoon. then remove the biscuit cutter to leave a nice round stuffing patty.
Continue until all the mixture is laid out in the baking tray.
Cook for 15-20 minutes or until golden.
