Store bought sweets can be packed with nasty sugars, starches and additives, so we’ve made these nutritious homemade sweets with fresh blueberries that’s even dairy free!

Only 5 minutes to make these, set them in the fridge and you’re done!

Our blueberry gummies

Our recipe uses only fresh blueberries, coconut milk, maple syrup and lemon juice.

Mix them up over a low heat and pour the mixture into fun silicone moulds or simply empty it into a baking pan.

Put them in the fridge for an hour and if using the baking pan cut out the sweets into small fun shapes.

You will have nutritious homemade sweets that your kids will love!

Are our homemade sweets healthy?

Blueberries are the king of the antioxidants.

Antioxidants protect the body from DNA damage, which means that they may slow the ageing process and protect us from cancer.

Studies have even yielded promising results that eating blueberries has a beneficial impact on memory.

Despite its’ name, coconut milk is not a true milk; it’s completely dairy free.

Coconut milk is an excellent source of valuable B vitamins and vitamins C and E, along with minerals including phosphorus, copper, iron, selenium, manganese, and magnesium.

It’s also calcium and Vitamin D rich, making it a great bone strengthener.

As our homemade sweets are just that…homemade, they’re free from white sugars and preservatives while still being delicious!

Ingredients

  • 1 cup fresh blueberries
  • ⅔ cup coconut milk
  • 1 Tablespoon of lemon juice
  • 4 Tablespoons of maple syrup or honey
  • 2 x 12 gram sachets of gelatin

Instructions

  1. Combine the fresh blueberries, coconut milk and lemon juice in a blender. Blend until everything is smooth.
  2. Put the mixture in a saucepan over a low heat.
  3. Add the maple syrup and simmer for a few minutes until the mixture begins to thicken slightly and darken in colour.
  4. Turn off the heat and add in the gelatin, stirring constantly to avoid any lumps.
  5. Pour the mixture into a silicone mould or a baking tray and refrigerate for at least one hour.
  6. Release the mixture from the moulds. If you’re using a baking tray then cut out small fun shapes using a cookie cutter. Enjoy your homemade sweets!

Blend the blueberries, coconut milk and lemon juice

Put your blueberries, coconut milk and lemon juice into a blender or food processor.  Puree until you have a smooth mixture.

Simmer on a low heat

Simmer on a low heat

Pour the mixture into a saucepan and heat on a low heat.

Add the maple syrup and simmer for a few minutes until it turns dark purple colour and loses it’s granular appearance.

Take off the heat and add the gelatin, stirring continuously for a minute or two.

Pour into moulds

Pour into moulds

Now pour everything into your chosen moulds.

If you don’t have shaped silicone moulds you can use an ice cube tray or simply pour it into a baking pan.

Cut out your gummy shapes

Cut out your gummy shapes

Refrigerate it for at least an hour, or until your homemade sweets are solid.

Release your gummies from the mould.

If you’re used a baking pan, use a sharp knife to cut them into cubes or cut them out into fun shapes using small cookie cutters.
