Simple and tasty veggie bites for toddlers. Packed with freshly grated vegetables sweet potato and courgette, they're shaped into tasty little veggie nuggets and cooked in a little oil.

Ingredients
1smallsweet potato(or half a large one) grated
1small potatograted
1smalloniongrated
¼courgettegrated
2-3tablespoonsplain flour
1egg
2tablespoonsolive oil
Instructions
Peel and grate the sweet potato, potato and onion. Place in a mixing bowl.
Grate the courgette and add it to the same bowl.
Mix in a lightly beaten egg.
Add 2 tablespoons of plain flour and stir well. If the mixture is still quite sticky, you can add in another tablespoon.
Form the mixture into small patties with your hands by pressing it together.
Heat 2 tablespoons of olive oil in a shallow frying pan on a low heat.
Cook each vegetable patty on either side until golden brown and cooked through.
