French Toast for Baby Without Milk

A simple 3 ingredient recipe for French toast that contains no eggs or even dairy. Its main ingredients are simply banana, coconut milk and bread fingers.
You can put it together in a few minutes for baby’s breakfast.

Ingredients

  • 1 banana ripe
  • 2 slices bread (we used wholemeal)
  • 100 ml coconut milk
  • 1 tablespoon coconut oil

Instructions

  • Cut each slice of bread into 3 long strips.
  • In a shallow bowl, mash the banana and coconut milk together with a fork until you get a thick mixture. Set it next to the plate of bread strips.
  • Heat a tablespoon coconut oil in a frying pan and wait until it’s warm before starting to cook.
  • Quickly submerge the bread strips into the banana coconut milk mixture, and lift them straight out. Lay them on the pan with heated coconut oil.
  • Cook on a medium-high heat and flip the French toast strips every 20-30 seconds until they’re golden brown on all sides. Serve the fingers on their own or with fresh fruits.

Notes

The bread strips only need to be dipped in the banana coconut milk mixture for a second or they might get too soggy.
