Veggie Bites for Toddlers

Simple and tasty veggie bites for toddlers. Packed with freshly grated vegetables sweet potato and courgette, they're shaped into tasty little veggie nuggets and cooked in a little oil.

Ingredients

  • 1 small sweet potato (or half a large one) grated
  • 1 small potato grated
  • 1 small onion grated
  • ¼ courgette grated
  • 2-3 tablespoons plain flour
  • 1 egg
  • 2 tablespoons olive oil

Instructions

  • Peel and grate the sweet potato, potato and onion. Place in a mixing bowl.
  • Grate the courgette and add it to the same bowl.
  • Mix in a lightly beaten egg.
  • Add 2 tablespoons of plain flour and stir well. If the mixture is still quite sticky, you can add in another tablespoon.
  • Form the mixture into small patties with your hands by pressing it together.
  • Heat 2 tablespoons of olive oil in a shallow frying pan on a low heat.
  • Cook each vegetable patty on either side until golden brown and cooked through.
