Quinoa Flour Banana Bread

Making quinoa flour banana bread means you get a tasty snack or dessert that’s also high in protein and in fiber. It’s just as easy to make as regular banana bread and you can adjust it by adding any toppings you want. We chose raisins but you could go for chocolate chips, pecan nuts or banana slices.

Quinoa Flour Banana Bread

Ingredients

Wet ingredients

  • 3 large ripe bananas
  • ⅓ cup almond milk (80 ml)
  • ⅓ cup coconut oil melted (80 ml)
  • ⅔ cup maple syrup (160 ml)
  • 1 teaspoon vanilla extract
  • 1 egg

Dry ingredients

  • 1 ¾ cups quinoa flour (190 grams)
  • 1½ teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ cup raisins

Topping ideas:

Extra raisins scattered evenly across top before it goes in the oven.

Instructions

  1. Preheat the oven to 170°C or 340°F fan setting.
  2. Blend the banana, almond milk, coconut oil, maple syrup, vanilla extract and egg together until smooth.
  3. Empty into a bowl and add in the flour, baking powder and cinnamon.
  4. Stir gently until just combined.
  5. Pour in the raisins and stir again.
  6. Transfer your batter to a greased loaf tin.
  7. Bake on the middle shelf of the oven for 20 minutes until a toothpick comes out clean.
  8. Let it cool to room temperature and slice to enjoy.

Blend the wet ingredients together

Place the bananas and wet ingredients in a small mixer and blend until smooth: almond milk, coconut milk, maple syrup, vanilla extract and 1 egg.

Add in the dry ingredients

Empty the blended ingredients into a mixing bowl. Add in the quinoa flour, baking powder and cinnamon.

Mix until evenly distributed and then stir in the raisins (or your chosen toppings) too.

Pour into a greased loaf tin and sprinkle with more raisins

Pour your batter into a greased tin and sprinkle some extra raisins or chocolate chips over the top.

Bake on the middle shelf of a preheated oven 170°C or 340°F fan setting for about 20 minutes or until a knife comes out clean.

Serve up as a healthy snack

Let it cool to room temperature and then cut thick slices for a healthy snack.
