How to Make One Bowl Banana Bread?
One bowl banana bread is as easy as it sounds and all the ingredients can be added to one bowl and mixed together before baking in a greased loaf tin.
It does help if you put everything in in the right order though.
We prefer to start with the bananas so that we can mash them evenly in the bowl. Then it’s easy to add the maple syrup and softened butter to mix it all together.
We follow with the eggs which we beat in, and then stir in the dry ingredients to complete the batter.
Banana bread likes to be cooked gently for a longer time so we put it on the middle shelf of the oven for 40 minutes at a slightly lower temperature.

Wet ingredients:
- 4 very ripe bananas
- ⅔ cup unsalted butter (150 grams), softened
- ¾ cup pure maple syrup (180 ml)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon vegetable oil
- 1 tablespoon Greek yogurt (or natural yogurt)
Dry ingredients:
- 2 cups self-raising flour (240 grams)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt (remove if using salted butter)
Toppings (optional)
- ¾ cup chocolate chips (100 grams)
Or:
- ¾ cup raisins
- 75 grams crushed hazelnuts

- Preheat the oven to 160°C (320°F) fan setting and grease a loaf tin with butter or oil spray.
- Take a large mixing bowl and mash the ripe bananas with a fork until they’re an even puree.
- Stir in the softened butter, maple syrup and eggs and mix well.
- Add the remaining wet ingredients: the vanilla extract, vegetable oil and the Greek (or natural) yogurt. Stir it all together again.
- Add in the dry ingredients: the self-raising flour, baking powder, baking soda, ground cinnamon and salt.
- Mix until everything’s evenly distributed.
- If you’re adding in any extras like chocolate chips, crushed hazelnuts or raisins, add these in now and carefully stir them into the batter.
- Pour the batter into your greased loaf tin.
- Bake on the middle shelf of the oven for 40-45 minutes until golden on top and a knife comes out clean. Enjoy with a cup of tea for an afternoon treat or as a mid-morning energy booster.

Mash the Bananas with Maple Syrup and Butter
When you’ve set the oven to 160°C (320°F) fan setting, grease a loaf tin so that you’re ready to go. (You can also line it with greaseproof baking paper if you prefer)
Start with the ripe bananas and mash them together in a bowl.
Then add in the butter and maple syrup and keep mixing it together until it’s all an even puree.
Add in the Wet Ingredients Then the Dry Ones
Start by adding in the rest of the wet ingredients which are the vanilla extract, vegetable oil and Greek yogurt.
When they’re stirred in you can add the flour, baking powder, baking soda, ground cinnamon and a pinch of salt.
Stir everything gently so that it’s all mixed together.
If you’re adding in any extras like chocolate chips or raisins or crushed nuts, you can do this now.
You can also sprinkle some over the top of the loaf when it goes in the tin.
Bake on the Middle Shelf of the Oven for 40-45 Minutes
Pour your mixture into the greased loaf tin.
Bake in the oven for 40-45 minutes. The top should be golden and a toothpick should come out clean.
