Feta cheese and spinach muffins image

Do your kids run a mile as soon as they see a green leaf approaching their plate? If so then why not try these savoury feta cheese and spinach muffins?

Each one has 20 grams of nutritious spinach in it! Baked with feta cheese and wholemeal flour they’re tasty as well as being a healthy snack. They can also be frozen and defrosted when needed.

Ingredients

  • 200 grams fresh spinach leaves
  • 200 grams feta cheese
  • 170 grams self raising flour (1½ cups)
  • 90 grams wholemeal flour (⅔ cup)
  • 150 mls milk
  • 1 egg
  • 100 grams butter, softened
  • 1½ teaspoons baking powder
  • 3 tablespoons Parmesan cheese, grated
  • 10 grams fresh dill
  • 3 tablespoons sesame seeds (optional)

 

Instructions

  1. Rinse the spinach well. Sprinkle with salt and massage it into the spinach leaves. Leave for 5-10 minutes. This softens the spinach leaves a little.
  2. In the meantime preheat the oven to 180°C (350°F) fan setting. Take a 12 cup muffin tray and spray with oil spray.
  3. Start preparing the ingredients in a mixer. Add the feta cheese, egg, milk, softened butter and dill.
  4. Then you can return to the spinach leaves and rinse off the salt. Grab bunches of spinach and squeeze or wring it out like you would a wet cloth, to get all the water out. Pat dry with a paper towel and pop the spinach in the mixer with the other ingredients.
  5. Blend it together until it makes a soft paste. Only blend as much as you have to in order to get the right consistency and spoon it out into a large bowl.
  6. Add in your self-raising flour, wholemeal flour and baking powder. Mix with a spoon until combined.
  7. Spoon the mixture into greased muffin cups.
  8. Sprinkle with grated Parmesan cheese and sesame seeds (optional).
  9. Bake on the middle shelf of the oven and bake for 20 minutes or until golden brown on top.
  10. Remove and let them cool down. Enjoy!

Sprinkle with salt and massage it into the spinach leaves.

Leave it to rest for 5-10 minutes to soften the leaves.

In the meantime preheat the oven to 180°C (350°F) fan setting. Take a 12 cup muffin tray and spray with oil spray.

In a mixer add the feta cheese, egg, milk, softened butter and dill.

Take your salted spinach. Rinse it and squeeze it with your hands or with a kitchen cloth to get all the water out. Add it to the mixer.
