This blueberry jelly takes just 5 minutes to prepare and then it sets in the fridge, ready to use as a healthy spread.

How is blueberry jelly made?

Blueberry jelly can be made in just 5 minutes and then left to set in the fridge.

You blend together the blueberries and basil (if you’re not keen on basil you can leave it out). Then you simmer it for a few minutes with the other ingredients: the lemon juice, zest and honey.

Finally you stir in some gelatin and it’s ready. You can spoon it into glass jars to set in the fridge.

 

How to make blueberry jelly without sugar?

We’ve used honey instead of sugar to give the blueberry jelly a lot of sweetness, while also making it more natural.

It tastes just as good and is that little bit healthier.

Ingredients

  • 1 cup fresh blueberries
  • 3 basil leaves
  • ½ lemon – juiced and zested
  • 2 tablespoons honey
  • 1 x 12 gram sachet gelatin

Instructions

  1. In a food processor, blend the blueberries and basil leaves until chopped.
  2. Place the blended blueberries and basil leaves in a small saucepan.
  3. Add in the juice and zest from half a lemon along with 2 tablespoons of honey.
  4. Bring it to the boil and simmer for a few minutes on a low heat.
  5. Take the saucepan off of the heat and stir in the gelatin while still warm. Keep stirring until it’s fully dissolved.
  6. Spoon your jelly out into glass jars and place in the fridge to set, ready to enjoy for breakfast.

They don’t need to become a liquid, just blended.

Place in a small saucepan and add in the zest of half a lemon along with the juice of half a lemon.

Add 2 tablespoons of honey and stir well.

Bring to the boil and simmer for a few minutes on a low heat setting.

Take your saucepan off of the heat and stir in the gelatin.
