Ingredients
Sushi base:
- 9 sheets of nori, full or half sheets
- 1 ½ cups of sushi rice
- 2 Tablespoons of rice wine vinegar
- 1 Tablespoon of sugar
California roll filling:
- ½ a cucumber
- 1 small carrot, grated
- 1 tablespoon of mayo
- 1 avocado, chopped into thin slices
Egg and edamame roll filling:
- 2 eggs, fried in a thin omelette and sliced
- ½ cup of edamame
- 1 tablespoon of mayo
Green dragon roll filling:
- A handful of spinach
- Half a block of tofu, cut into thin strips and lightly fried in oil
- ½ ripe avocado thinly sliced
- 1 tablespoon of mayo
Instructions for all sushi rolls
- Cook the sushi rice according to the package instructions.
- Put the rice wine vinegar and sugar in a microwave safe jug and microwave on a high level for about 30 seconds.
- Transfer the cooked rice to a large bowl. Add the rice wine vinegar mixture to the rice and turn the rice over until it is fully coated and the rice has cooled.
- Place one nori sheet shiny side down on a sushi mat.
- Place ¾ cup of sushi rice on the nori and pat down with wetted fingers (if you’re using half nori sheets, then use half this amount of rice). Leave a 2cm strip at the short end.
- If using mayonnaise for your filling, spread it across the centre of the rice here.
- Arrange your chosen ingredients over the centre of the sushi and using the sushi mat, roll the sushi up. It’s important to keep the roll as tight as possible.
- Cut each roll into individual sushi pieces.
California Roll
California roll filling:
- ½ cucumber thinly sliced
- 1 small carrot, grated
- 1 tablespoon of mayo
- 1 avocado, chopped into thin slices
Step 1: Prepare your nori sheet
Follow the instructions to prepare the rice.
Put your rice on your nori sheet (shiny side down) with wet fingers.
Pat the rice down.
Spread the mayonnaise across the rice
Step 2: Add the filling
Finely slice your avocado and cucumber.
Place the slices and grated carrots on top of the rice in a thin layer.
Using your sushi mat, roll a tight roll and cut into sushi pieces
Egg and edamame rolls
Egg and edamame roll filling:
- 2 eggs, fried in a thin omelette
- ½ cup of edamame
- 1 tablespoon of mayo
Step 1: Prepare the egg
Fry the egg in a small lightly oiled frying pan.
Tilt the pan around, making sure that the egg spreads out evenly.
Flip the egg gently after about 2 minutes.
Cut your cooked egg into strips and set aside.
Step 2: Prepare your nori sheet
Follow the instructions to prepare the rice.
Put your rice on your nori sheet (shiny side down) with wet fingers.
Pat the rice down.
Spread the mayonnaise across the rice
Step 3: Make your roll
Put a few strips of egg on top of a a few teaspoons of mayo and a sprinkling of edamame.
Using your sushi mat, roll your sushi up as tightly as possible and cut into sushi pieces.
Green dragon roll
Green dragon roll filling:
- A handful of spinach
- Half a block of tofu, cut into thin strips and lightly fried in oil
- ½ ripe avocado thinly sliced
- 1 tablespoon of mayo
Step 1: Fry your tofu
Cut your tofu into long thin strips and fry in a little bit of oil.
Step 2: Prepare your nori sheet
Follow the instructions to prepare the rice.
Put your rice on your nori sheet (shiny side down) with wet fingers.
Pat the rice down.
Spread the mayonnaise across the rice
Step 3: Prepare your roll
Layer your tofu, avocado and spinach on top of a little bit of mayo and roll your sushi roll up as tightly as possible.
Cut your sushi into pieces.

Cook your sushi rice according to the package instructions.
Heat your rice wine vinegar and sugar in the microwave for 30 seconds.
Pour into your bowl of rice.
Turn the rice over with a spoon until it’s totally coated and your rice has cooled off.
Put your rice onto your nori sheet (shiny side down) and pat the rice all over the nori sheet with wet fingers.
Leave 2cm at the end of your nori sheet clear of rice.
Spread 1 tablespoon of mayonnaise across the rice.
