Oats are full of fibre and supply long lasting energy. They fill you up and keep you feeling full for longer. Some recent studies have also shown that oats may even help prevent childhood asthma.

Bananas are a creamy and delicious natural sweetener. It’s best to use a very ripe banana as the riper they are the sweeter the pancakes will be. Babies who are moving on from breast milk or baby milk have a natural affinity for sweet things, so bananas are a great first food. In addition, bananas are high in both potassium and fibre.

Coconut milk is so rich in nutrients. It mostly contains ‘healthy fats’ which are good for babies brain development.  It also contains vitamins like iron and magnesium.

Ingredients

  • One ripe banana
  • 50 grams gluten free oat flour (if you don’t have oat flour you can blend gluten free rolled oats)
  • 130 ml coconut milk

Instructions

  1. Mash the banana in a medium sized bowl with a fork.
  2. Add the oat flour and coconut milk and stir to combine. If you don’t have oat flour you can blend some gluten free rolled oats in a food processor until they reach a fine consistency.
  3. Spray a frying pan with cooking spray (or add a tablespoon of cooking oil).
  4. Take a spoonful of the batter and drop onto the pan.
  5. Cook on a low heat until the pancakes are golden on both sides. Serve and enjoy!
