Pea and Mint Soup for Baby

Ingredients

  • 1 cup peas (110 grams)
  • 7 mint leaves
  • 60 ml baby’s milk (if just for baby) or milk, cream or crème fraiche (if for baby and whole family).

Instructions

  1. Cover the peas and mint leaves with water and bring to the boil.
  2. Simmer for 5 minutes until the peas are cooked through.
  3. Drain the peas and mint but save the drained liquid in a bowl.
  4. Add the peas and mint to a blender and cover with a little of this drained liquid along with some milk. If the meal is just for baby this can be baby’s usual milk. Otherwise it can be regular milk, cream or crème fraiche (for baby and the whole family).
  5. Blend until smooth. If you prefer you can use a handheld blender instead to do this.
  6. Serve while warm.

If you’re serving to older babies or children you could add some garnishes as well. Some ideas are:

  • herby croutons
  • diced pancetta fried for a minute in a pan
  • a slice of warm, crusty bread.

Simmer the Peas and Mint

Boil the peas and mint in water for 5 minutes.

The peas should be soft and cooked through.

Drain, saving the drained water in a bowl.

Put the peas and mint in a blender (or you can use a handheld immersion blender in the saucepan).

Add the baby’s milk or cream or crème fraiche, and just enough of the saved liquid to reach the right consistency for your baby’s puree or for your soup.

If you’re unsure start with a very small amount of water and add more bit by bit until it looks right.
