Ingredients
- Sweet potatoes
- Vegetable oil
- Oregano
Instructions
- Preheat the oven to 180°C (350°F) fan setting. Put vegetable oil in a baking tray, just enough to cover the base of the tray, and put in the oven.
- Wash, peel and slice sweet potatoes into chunky chip sized rectangles.
- Boil for 10-15 minutes
- Drain and sprinkle with oregano
- Open the oven and carefully spoon the sweet potato sticks into the oil. The oil should be hot when the sweet potato makes contact with it, so we spoon them in with the tray still in the oven. Make sure each chip has its own space and try to cover them with a bit of oil.
- Roast for 20 minutes then flip. This part can be tricky but helps all sides get nice and crunchy.
- Bake for another 15-20 minutes, or until the edges turn golden brown
