Try this healthier take on chips. Crunchy and delicious, young children won’t even notice they are eating vegetables with these courgette fries. We recommend them with this delicious tzatziki dip which can be whipped up in a minute.

Ingredients

Courgette fries:

  • 3 medium courgettes, sliced into chips
  • 1/2 cup flour (60g)
  • 1/2 cup breadcrumbs (65g)
  • 3 eggs
  • 1 teaspoon garlic powder
  • 3 sprigs parsley washed, dried and chopped
  • 1/2 cup parmesan (50g)
  • 2 Tablespoons olive oil

Tzatziki dip:

  • 1/2 cup yoghurt (120g)
  • 1½ tablespoons chopped chives
  • 1½ tablespoons lemon juice
  • 1/2 large garlic clove minced

 

Instructions

  1. Wash and slice your courgettes into chip-size slices.
  2. Mix the breadcrumbs with the chopped parsley, garlic powder and grated parmesan.
  3. Prepare your three bowls: one with flour, one with beaten eggs and one with the breadcrumb mixture.
  4. You can dip courgette pieces into the flour, then the egg, then the breadcrumbs and pop them in the frying pan. Or, to make things easier and quicker, you could put a portion of the breadcrumb mixture into a plastic food bag. Then take the courgette slices a handful at a time and coat them in flour in the flour bowl, then coat them with egg in the egg bowl, and pop them in the bag with the breadcrumb mixture. Shake them about a bit until all pieces have breadcrumbs stuck to them. Tip the pieces out into the frying pan. Add a bit more breadcrumb mixture and start again.
  5. Heat 2 tablespoons of olive oil in a pan. Spread the oil over the surface of the pan.
  6. Place the courgette pieces into the pan, giving each one some space of its own to cook in. When brown flip onto the other side for a minute and then remove from the pan. You may have to do a few batches.
  7. In the meantime prepare your tzatziki sauce by mixing the ingredients together in a bowl: the yoghurt, chopped chives, minced garlic and lemon juice. And that’s it, it’s ready to serve!

Alternatively you could try this method which means you can do more pieces at the same time: put a portion of the breadcrumb mixture into a plastic food bag.

Then take the courgette slices a handful at a time and coat them in flour in the flour bowl, then coat them with egg in the egg bowl, then pop them in the bag with the breadcrumb mixture and shake them about a bit until all pieces have breadcrumbs stuck to them.

Tip the pieces out gently into the frying pan when the oil is warm.
