Ingredients

Wet Ingredients

  • 4 ripe bananas
  • cup unsalted butter (150 grams) softened
  • ¾ cup pure maple syrup (180 ml)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegetable oil
  • 1 tablespoon Greek yogurt (or natural yogurt)

Dry Ingredients

  • 2 cups self-raising flour (240 grams)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt (remove if using salted butter)

Toppings (optional)

  • ¾ cup chocolate chips (100 grams)
  • ¾ cup raisins
  • 75 grams crushed hazelnuts

Instructions

  • Preheat the oven to 160°C (320°F) fan setting and grease a loaf tin with butter or oil spray.
  • Take a large mixing bowl and mash the ripe bananas with a fork until they’re an even puree.
  • Stir in the softened butter, maple syrup and eggs and mix well.
  • Add the remaining wet ingredients: the vanilla extract, vegetable oil and the Greek (or natural) yogurt. Stir it all together again.
  • Add in the dry ingredients: the self-raising flour, baking powder, baking soda, ground cinnamon and salt.
  • Mix until everything’s evenly distributed.
  • If you’re adding in any extras like chocolate chips, crushed hazelnuts or raisins, add these in now and carefully stir them into the batter.
  • Pour the batter into your greased loaf tin.
  • Bake on the middle shelf of the oven for 40-45 minutes until golden on top and a knife comes out clean. Enjoy with a cup of tea for an afternoon treat or as a mid-morning energy booster.
