Preheat the oven to 160°C (320°F) fan setting and grease a loaf tin with butter or oil spray.
Take a large mixing bowl and mash the ripe bananas with a fork until they’re an even puree.
Stir in the softened butter, maple syrup and eggs and mix well.
Add the remaining wet ingredients: the vanilla extract, vegetable oil and the Greek (or natural) yogurt. Stir it all together again.
Add in the dry ingredients: the self-raising flour, baking powder, baking soda, ground cinnamon and salt.
Mix until everything’s evenly distributed.
If you’re adding in any extras like chocolate chips, crushed hazelnuts or raisins, add these in now and carefully stir them into the batter.
Pour the batter into your greased loaf tin.
Bake on the middle shelf of the oven for 40-45 minutes until golden on top and a knife comes out clean. Enjoy with a cup of tea for an afternoon treat or as a mid-morning energy booster.
