Parsnip Chips

Ever wonder if there was a healthy alternative to packaged crisps? These parsnip chips make a healthy kids snack or side dish for family dinners.

Ingredients

  • 2 parsnips
  • 1 tbsp fresh thyme leaves
  • 4 tbsp olive oil
  • Pinch of salt and freshly milled pepper

Instructions

  • Preheat the oven to 180 degrees Celsius.
  • Wash and peel the parsnips, cut the top and end off.
  • Take a vegetable peeler and carefully peel thin slivers of parsnip starting from the thick end. Place in a bowl.
  • Add the olive oil, thyme leaves, salt and freshly milled pepper. Mix well until each parsnip sliver is covered in oil.
  • Place on a large baking tray. Spread them out so that each sliver has its own space.
  • Cook for 25 minutes or until golden. Keep an eye on them as they brown quickly.
  • Remove from the oven and let them cool a little. Enjoy!
