Ingredients

Homemade Pizza Base

  • 4 cups Italian 00 flour (or plain flour) 500 grams
  • ½ teaspoon salt
  • 1 sachet yeast (7 grams)
  • 300 ml warm water
  • 2 tablespoons maple syrup
  • 2 tablespoons vegetable oil

Pizza Toppings

  • 1 cup passata (240 ml)
  • 1 lb mozzarella cheese, grated (450 grams)
  • 24 cherry tomatoes halved
  • 1 yellow pepper
  • 1 green pepper
  • ½  punnet mushrooms (125 grams)

Instructions

Homemade Pizza Base

  • Pour the flour and salt into a large mixing bowl. Make a hole in the top of the mound.
  • Mix the yeast in the warm water until dissolved and pour it gently into the middle of the flour.
  • Add in the maple syrup and vegetable oil.
  • Gradually mix everything together until you have a smooth dough and then knead it for a few minutes.
  • When it’s ready, roll it into a ball in the bowl. Cover the bowl with a warm damp cloth and leave it to rise for anywhere between 20 minutes to an hour.

Rainbow Pizza

  • When you’re ready to cook, preheat the oven to 180°C or 350°F fan setting.
  • Flour a clean surface and roll out your pizza dough into a large circle.
  • Using a sharp knife, cut out an arch from the circle and place it on a greased baking tray.
  • Spoon on a thick layer of tomato passata on top of the base and cover with the grated mozzarella cheese.
  • Carefully add on your vegetables in colour layers, starting from the innermost ‘band’ and working your way out. Leave enough space to have some nice thick layers of colour.
  • When you’ve covered the pizza in your chosen vegetable colours, cook on the middle shelf of the oven for 20-30 minutes or until golden. Enjoy while warm!
