Ingredients

  • ½ carrot peeled and chopped
  • ½ sweet potato peeled and chopped
  • 1 leek diced
  • 1 tablespoon olive oil
  • ½ cup broccoli florets
  • 1 chicken fillet (about 125 grams), cut into small cubes
  • 650 mls low sodium chicken stock or water
  • 8 coriander sprigs

Instructions

  • Peel and dice your carrot and sweet potato. Cut your broccoli into small florets and finely chop the white part of your leek.
  • Heat 1 tablespoon of olive oil in a medium sized saucepan on a low heat.
  • Add in your chopped leek, carrot and sweet potato pieces. Let them sweat for 5 minutes.
  • Then add in your broccoli florets, chicken pieces, and your low sodium chicken stock or water.
  • Bring to the boil and simmer for 20 minutes. If necessary top up with water to keep the right consistency.
  • You can either serve it as is, with small soft chunks. Or you can blend it into a smooth and creamy soup, using a handheld blender or a mixer. The chicken pieces may need to be shredded a little for young babies.
  • Sprinkle with coriander and serve while warm.
