Prepare the breadcrumb mixture. Blend the breadcrumbs, crushed garlic or garlic powder, parsley leaves and Parmesan cheese together until fine.
Cut the cod fillets into 1 inch wide strips.
Line up your ingredients. Place the flour in a shallow bowl or plate, beat the eggs in another bowl and set them next to your breadcrumb mixture and fish strips.
Then start making your fish fingers. Place the olive oil in a frying pan and set on a medium heat.
Dip each fish strip in the flour and roll it around until covered. Shake it off to get rid of any excess.
Dunk each strip in the beaten eggs and let the excess drip off.
Finally, roll them around in the prepared breadcrumb mixture and place them in a frying pan.
Cook the strips on both sides until golden and cooked through. Serve with chips, rice and green beans and enjoy!
